For my fall activity list I wanted to create my own soup recipe. It turned out delicious, so here it is!

INGREDIENTS:


  • 2 large white sweet potatoes (peeled and cubed)
  • 2 tbsp olive oil
  • 1 yellow onion (diced)
  • 3 medium carrots (chopped)
  • 2 zucchinis (chopped)
  • 5 celery sticks (chopped)
  • 3 cloves of garlic (minced)
  • 4 cups vegetable broth
  • 4 cups of white beans
  • 10 leaves of lacinato kale, de-stemmed and chopped
  • 2 fresh sprigs of rosemary (finely chopped)
  • 1/2 tsp red pepper flakes
  • sprinkle salt and pepper
  • juice from one lemon

INSTRUCTIONS:


  • in a large pot, boil the sweet potatoes until soft
  • in a separate pot heat olive oil over medium/low heat, add carrots, zucchini, onions, and celery and sauté for 10 minutes
  • add minced garlic and sauté for another minute
  • drain sweet potatoes and blend into a puree
  • add broth, sweet potato puree, and white beans to the vegetable mixture and stir until combined
  • let the soup simmer for 20 mins, and then add kale and let simmer another 5 minutes
  • stir in the rosemary, salt, pepper, and lemon juice
  • let sit for a few minutes and then serve with some fresh lemon juice and chopped parsley


For a non-vegetarian option, try adding shredded chicken.
